My fiancé is lactose intolerant, but I’ve always dreamed of having a traditional buttercream wedding cake. What are my options?
First, there is no rule that states you absolutely have to have a wedding cake at your reception. Many couples today opt for sweet tables with candies and other baked goods so that people can choose what works best with their dietary restrictions.
Second, many bakeries will make dairy-free or gluten-free cakes. However, with these cakes you must be adaptable to what those ingredients can do. A cake made without dairy or wheat will simply not look or taste the same as one made with traditional ingredients. That doesn’t mean that they won’t be delicious, just that you ought to have measured expectations.
Third, you can serve a traditional cake to your guests. Tobey deChristopher, director of The Artisan Cake Guild, states, “The cake cutting ceremony is one of the most profound wedding traditions, and it would be a shame to lose out on that because of a dietary sensitivity.” Order a dairy-free dessert for your husband and either keep it in the kitchen, or serve it as the groom’s cake. Have a bite of that dessert ready to serve your husband (if he is extremely lactose-intolerant) during the cake-cutting ceremony.
