This wonderfully rich appetizer will be a sure hit. Fresh dates pair wonderfully with the manchego cheese (similar to parmesan but more robust) and the exotic flavor of truffle honey is a surprise in every bite.

Medjool Dates with Manchego Cheese and Truffle Honey
The slight acidity of the sheep's milk Manchego provides the perfect accompaniment to the sweetness of the date. The aromatic truffle honey is an indulgent finishing touch.
Yield: 50 pieces
Ingredients:
50 ea Medjool dates, halved and pitted
1# Manchego Cheese (shaved thick with a vegetable peeler)
1/2 C Orange Blossom Honey
1 T White Truffle Oil
To Serve:
Mix honey and oil; sandwich a slice of Manchego in the date and drizzle with truffle honey.
Tip:
Try the truffle honey on popcorn. It is amazing!
