Edamame Dip: A Chef Drew Original

If you are looking for a quick and easy appetizer for a large group like a rehersal dinner or bridal shower, then look no further! Edamame Dip is a tasty treat that takes just minutes to prepare. This dip is very similar to hummus but uses Edamame beans instead. Edamame beans are soybeans and are available at most markets in the freezer section. The vibrant green color makes for a stunning presentation.

Yield: 2 Cups

Edamame Dip Ingredients:
2 Cups frozen Edamame Beans. (Ideally shelled)
4 Basil Leaves
2 Cloves of Garlic
3 T light Miso
1 Star Anise
2 T Rice Vinegar
1/4 Cup Vegetable Oil
3 T Cold Water
Salt and Pepper to taste

Misc. Ingredients:
Your choice of chips and vegetables to dip. I suggest rice crackers.

Method:
Boil edamame approximately 5 minutes. Drain and ice to cool.
Place beans herbs and spices in food processor and run until fairly smooth.
Once smooth slowly incorporate oil then slowly incorporate water.
