Spicy Tuna Tartar with Tequila Sour Cream Garnish

This recipe is like a Spicy Tuna Roll on a chip! If you're like me and like a little tuna with your tartar, I suggest adding a little more mayo than the recipe calls for. Mmmm...mayo. But I digress.

I think you'll find the spicy, acidic tartar ingredients cut through the rich flavor of the tuna. Its vivid presentation makes this dish especially festive.

Yield: 50 pieces

Tartar Ingredients:
1.5# Sushi Grade Tuna, small dice
3 ea Shallots, chopped
1 Bunch chives, chopped
2 T Fresh Lime Juice
1 T Mayonnaise
1 T Extra Virgin Olive Oil
1 T Sriracha (available in most Asian markets and some grocery stores)
Salt and pepper to taste

Sour Cream Garnish Ingredients:
1 C sour cream
2 T Tequila
Salt and pepper to taste

Misc. Ingredients:
50 Red corn tortilla rounds, fried (these can be cut out of regular sized tortillas with a 1.5 inch round cookie cutter and then fried in 350 degree oil.)

Method:
*Mix all Tartar ingredients.
*Mix all Sour Cream Garnish ingredients and place in squirt bottle.

To Serve:
Place a small amount of tuna mixture on tortilla and garnish with a dollop of Tequila Sour Cream.

Tip: Sriracha sauce is spicy! Add a little more or less to taste.
