
Honey is an emollient – it makes skin softer, a humectant – it pulls moisture from the surrounding air, a disinfectant, a cleanser, a preservative, a healing agent and a toner for the digestive system especially the stomach and liver, it is also a lubricant for the intestines.
Honey will keep for thousands of years, if harvested “ripe” or with a moisture content of below 19 %. After harvest, it is best to bottle it airtight. Honey absorbs moisture and it will absorb moisture from the air if the bottle is left open. When the moisture content of honey rises above 20%, it begins to ferment. It will be best to keep honey in a cool dark place.
We chose the bee because of its association with honey and because it sounds like "'by" (short for Baby), our term of endearment for each other. =)
