Hello and thank you for venturing into my Sweet World!
I bring to you Cakes by Nicolle as my way of sharing with all of you my passion for baking, cake decorating and blogging about all things decadent.
I have been baking since I can remember, always begging my mom to bake something with me even though she wasn’t much of a baker herself. But that didn’t stop me from wanting to learn and save every dessert recipe I could find at such a young age. However, my passion for baking truly set in back when I was in high school, working at a well known Italian pastry shop in my home town of Greenwich, Connecticut. Not only was I able to indulge in all the sweet treat they had to offer, but I was able to help create them as well, and that was true bliss for me.
Cakes by Nicolle is my labor of love. It is a testament to all of my hard work, sacrifice and passion for baking. I am a trained Pastry Chef and graduate of the prestigious Institute of Culinary Education (ICE) in New York City. I have been very fortunate to learn and be mentored by a few of the best in the industry. I have worked along side Ruth Drennan of Ruth Drennan Cakes, Gail Watson of A Simple Cake, and Chef Alfred Stephens of Olives at the W Hotel in Union Square. I am also a proud member of the International Cake Exploration Societe (ICES).
With all my passion, knowledge and experience, I will work with you to design a beautiful sweet creation that will be as unique and as memorable as your event itself.
