Creative menus, superb service
Dunbar House’s Head Chef Alex Gubbins was born and bred in Sydney, but her celebrated food reflects her wide international experience and influences. Mentored during her apprenticeship at Sydney Theatre Company’s Wharf Restaurant by legendary chefs Tim Pak Poy and Aaron Ross, Alex then worked at various hatted Sydney establishments, including Quay and Claude’s. Her passion for cooking with freshest local produce to create uncomplicated but delectable food was influenced by her next move – to the Michelin starred Arnolfo in Tuscany. Next Sardinia, where she perfected those Italian favourites anti-pasto, pasta, pizza and pastry. Then two hatted Pilu in Sydney, before being snapped up by Grand Pacific Group. With this illustrious CV it’s not surprising that Alex’s fabulous food has a distinctly Mod Oz appeal, with Asian fusions and a strong dash of Italian pizzazz.
