Assembling a wedding cake is an intricate dance of timing, flavor, and beauty. We slice each cake tier into four thin layers, and add just the right amount of filling. We want every bite you take to have the perfect ratio of cake to filling. We use preserves sparingly, being cautious to add nice acidity and color to the cake's flavor-not a thick glob of jelly. It takes a lot of time and labor to produce a wedding cake. Although we decorate wedding cakes the day of the wedding, it can take weeks to create finely detailed pastillage (sugar) decorations.
