Notes From the Chef Our mission is to design our food around your event. Are you planning a plated wedding reception or a gourmet picnic? Do your tastes lean toward Asian fusion or classic Southern favorites? Food has been a passion of mine for as long as I can remember. The kitchen seemed to be the heartbeat of my family and, growing up cooking with my grandmother, it was the life blood of special occasions and social events. The same holds true at Tartan Catering. Food is an evolving entity that must change with current trends and the demands of your clientele. Old standbys and nouveau cuisine have their place but they must fit the client, occasion, and facility. If all factors are not all taken into consideration, it is much like fitting a square peg into a round hole. As a chef, I want the food to be the star - not me. It must naturally have flavor, but with reason. It must have texture, color, and aesthetics to make the total package a success. You can have the best food in the world but it has to be coupled with quality service from start to finish or all preparation is in vain. The only thing I know after twenty years in this business is that presentation is done after the first bite, and the service and food must speak for themselves. |
