Cookies are easy to "green" as you can find bulk organic ingredients at every major supermarket chain including organic milk, organic butter, organic sugar, organic flour (or at least un-bleached flour), and organic eggs. As these ingredients make up the bulk of most cookie recipes, just substituting the greener versions is a quick way to produce a more natural dessert.
The nice thing about cookies is that you don't have to make them the night before your wedding - and you shouldn't! you don't need that stress. Most cookies freeze really well, so you can make them about a week ahead of time and follow these simple instructions to defrost them perfectly for your big day.
Step 1: Make sure your cookies cool completely before you freeze them (otherwise you will get condensation that makes them soggy). If you don't already own them, now is a good time to buy a set of cookie cooling racks.
Step 2: If your cookies are frosted or are decorated with something that could fall off put them uncovered on a tray in the freezer first and then, once they are firm, pack them together.
Step 3: Wrapping is the key to freshness. Some sites recommend individually wrapping cookies, but this seems excessively bad for the environment and if you are only freezing them for a few days it is not necessary. What my husband and I did for our dessert reception was take tupperware and stack the cookies with layers of natural waxed paper in between. For large quantities of cookies it may be easier to use freezer bags, in which case I would still use wax paper between layers and try to remove as much air as possible.
Step 4: Take the cookies out 12 - 24 hours in advance of your wedding, remove the tupperware top and place it back at an angle (so it covers about 2/3 of the container). This will allow the cookies to defrost without collecting condensation. If you are using plastic bags, you should probably unpack the cookies for the defrosting - but keep the wax paper between them until you are ready to serve.
Step 5: Create your display. Set your cookies out in vintage glass apothecary jars, on antique silver trays or even rough cut wood rounds or wood cake stands. Stand back and watch your guests enjoy your sweet success.
